Our idea is to create a place of culture and sharing. Our menu is built around fresh, colorful, honest, handcrafted cuisine. We embrace circular cooking, making the most of every ingredient to minimize waste. Contemporary techniques allow us to enhance flavor while celebrating the beauty of simplicity.
For us, being contemporary also means being inclusive. That's why our menu embraces vegan, vegetarian, meat, fish, and gluten-free dishes. We carefully select ingredients from both Spain and Italy, bringing together our roots and the land that welcomed us.
But why Amarillo?
The name holds many meanings. It blends the Italian amare ("to love"), Cotillo, the village we now call home, and mar ("sea"), a constant source of inspiration.
In Spanish, amarillo means yellow—the color of light. It is a tribute to Giulia's father, Lucio, whose name shares the same Latin root, lux ("light"), and whose dream helped inspire this place.
Finally, the ending -illo evokes something intimate and welcoming—a small place created with care, where we hope every guest feels at home.
